When bubbling boiling the milk tend to separate from water and juice. I use normal mango pureed with hand held mixer (like bamix) gives a smoother mixture compared to blender. The whole mixture did not boil. just so hot it is almost at boiling. can see little bubbles on side of pot, then stop. texture of this one is smooth. If you use mango puree like boiron, the consistency will be there and sugar content can be fixed.Greg Weehttps://www.blogger.com/profile/01910357316112134289noreply@blogger.comtag:blogger.com,1999:blog-5389659355332141065.post-47507953847253547142007-11-25T19:29:00.000+08:002007-11-25T19:29:00.000+08:00agree, this is a difficult dessert to make. a few ...agree, this is a difficult dessert to make. a few months ago, i made one using mango puree i made myself n the pudding came out set but full of curdled milk, probly due to the acid. then i rmbered u mentioned fruit purees frm Oz tt ppl use for icecream n sure enough it was available in cake shops n d pudding came out good. but i'll take this down n try it one day, so thanks for the recipe.Terri @ A Daily Obsessionhttps://www.blogger.com/profile/00220600890256142215noreply@blogger.com
